How to use Shiitake Mushrooms

Perfect for stir-fry's, as a side dish or in your dumpling filling, Shiitake mushrooms are a true staple of Chinese home cooking. Here are some tips and tricks for preparing them!

Step 1: Soaking Dried Mushrooms

Shiitake mushrooms are often easiest to find already dried. This means that they can be stored for a long time, and a big bag can be used in small amounts at a time.

For the best results, soak the mushrooms overnight:

  1. Rinse the dried mushrooms to remove any impurities.
  2. In a large jar or container, place your mushrooms and cover with cold or warm water. Ensure that there is ample room as the mushrooms will expand a little.
  3. Add a small plate or ramekin on top to keep the mushrooms from floating.
  4. Leave overnight to soak.
  5. Rinse again and squeeze out excess water before use.

For a faster method, try this:

  1. Rinse the dried mushrooms to remove an impurities.
  2. In a large jar or container, place your mushrooms and cover with hot water.
  3. Cover and let sit for 10 minutes, or until completely softened.
  4. Rinse before use. Squeeze out any excess water.

Step 2: Prepping

Shiitake mushrooms can be used in a variety of dishes. They can be sliced to add to stir-fry and noodles, braised whole, or diced for dumpling filling.

You might like to remove the end of the mushroom stalk as it can be tough and chewy.

 

Step 3: Cooking Methods

Sliced or diced shiitake can be added to almost anything, but our favourite way is to simmer them in spices and gluten free soy sauce.

Ingredients:

  • 30g dried shiitake
  • water to soak
  • 2 stalks of spring onion
  • 1 small knob ginger, sliced
  • 130ml mushroom stock (retained from after soaking)
  • 1/2 tsp salt
  • 40ml GF soy sauce/tamari

Method:

  1. Prepare the shiitake mushrooms as listed above. Retain mushroom stock for later use.
  2. Slice the mushrooms and add all ingredients to a small pot. Add a little extra stock or water if you want to make it less salty.
  3. Simmer on low heat for 20 minutes or until mushrooms have absorbed majority of the sauce.
  4. Serve with rice or any dish of your choosing! Ideal for enhancing dumpling fillings with elevated flavour.
