Chicken & Shiitake Dumpling Filling

This Chicken & Shiitake Mushroom filling is full of flavour! These are super easy to make at home using our Dumpling Pastry Mix and Maker Set.

Serving: 30-40 dumplings

Ingredients:

Pastry:

Filling:

  • 500g Chicken Mince
  • 150g Shiitake Mushroom, finely diced (learn how to prepare here)
  • 5 stalks Green Onion, finely chopped (green part only)
  • 5 stalks Coriander, finely chopped (optional)
  • 2 tsp Ginger, grated
  • 2 tsp Garlic, finely chopped
  • 1/2 tsp Salt or Tamari
  • 1/2 tsp White Pepper

Utensils:

  • Rolling Pin
  • Round Pastry Cutter or Maker Set

 

Method:

  1. Start by making the dough. Follow the instructions on the packet.
  2. While the dough rests, make the filling. Mix all the ingredients together until the mixture is slightly sticky.
  3. Cut the dough into 4 portions. Roll out one portion until 2-3mm thick. Dust with additional rice flour as needed
  4. Stamp out wrappers, and cover with a damp tea towel. Repeat until all the dough has been used.
  5. Take a wrapper and spoon a heaped teaspoon into the centre. For the easiest method, fold into a half moon and pinch edges tightly. Alternatively, use the images below to fold pleats.
  6. While wrapping the remaining dumplings, cover with a damp tea towel.
  7. Boil, pan fry or steam for 8-10 minutes.
  8. Enjoy with your favourite dipping sauce!
  9. To store any remaining dumplings, freeze after wrapping and cook from frozen for 10 minutes.
