Chicken and Mushroom Wontons with Asian broth

Earthy and Wholesome meal, rich in flavour. Homemade broth add amazing flavours to your food and have many health benefits. It's highly nutritious, containing ample amounts of important minerals such as calcium, magnesium and potassium. 
Place a whole chicken, 2 carrots, a handful shiitake mushroom, 4 spring onion, 1 lemongrass, 2 big thumb of ginger, 4 cloves of garlic, 3 kafir lime leaves and 2 star anise in a large pot with water.
Simmer for 4-6 hours.
  • 500gr of chicken mince
  • 2 spring onion stalks
  • 1 carrot shredded
  • 2 tbsp of freshly grated ginger
  • 3 garlic cloves, finely chopped
  • 2 tbsp of black bean sauce
  • 2 tsp of potato starch
  • 1 tsp of chili flakes *optional
  1. Prepare wonton dough as per packet instructions
  2. Proceed to roll the dough and make enough wonton wrappers
  3. Mix all ingredients for the filling, making sure the mixture is well combined.
  4. Place a small amount of filling mixture in the middle of each wonton wrappers then fold wontons.
  5. Place water in a big pot and bring to a boil.
  6. Boil wontons for 10minutes
  7. Serve up with some Asian chicken broth and drizzle some GF soy sauce.
