Asian Pork and Cabbage Bake Tray

Comforting dish to welcome the cooler days.
 
INGREDIENTS
  • 1 chinese wombok cabbage
  • 500gr of pork mince (you can also use beef, chicken or tofu)
  • 2 carrots
  • 1 zucchini 
  • 1 spring onion
  • 4 cloves of garlic
  • 1 big thumb of ginger
  • 2tbsp GF soy sauce
  • 2 tbsp Fish sauce
  • *Add any veggie that you'll like
 
METHOD
  1. Bring a large pot of water to boil. Immerse cabbage leaves and cook them for about 2-3 minutes (until soft). Then drain leaves and leave them to cool.
  2. Mix all other ingredients together until mixture is well combined
  3. Place a first layer of cooked cabbage leaves in a baking tray then top it with the meet and veggie mixture.
  4. Repeat until baking tray is full to the top 
  5. Bake in the oven for 40 to 45 minutes at 180C.
*This can be made ahead and refrigerated.
*Serve with some more GF soy sauce on top
